Ekipa FinoEkipa Fino
Fino is a fine dining restaurant with a nod to fine casual, i.e. elegance on a plate combined with a relaxed atmosphere.

Fino is Cezary, Marcin and Jacek, three partners who joined forces to create this place.

Fino is the people, both those who work here and those who visit us.

Fino is food, and our menu is a collection of experiences, tastes, smells, nostalgia for what we know from childhood and the pursuit of what is new, undiscovered and, at first glance, impossible to combine.

We create modern Polish cuisine, also in the version you cannot prepare yourself at home, which in a way is the essence of going to a restaurant.
Jacek Koprowski
Jacek Koprowski, chef and co-owner of Fino Restaurant in Gdańsk and Osteria Fino in Gdynia.

He draws inspiration from local ingredients and culinary techniques taken from all parts of the world.

Thanks to this, in Fino he and his team serve a modern version of Polish flavours in fine dining style.

In Gdynia, on the other hand, they interpret Italian cuisine more freely and translate it to Polish soil.

Jacek is the winner of, among others, the Prix au Chef D'Lavenir of the International Academy of Gastronomy in 2024 and the Culinary Hermes in the category Chef of the Future in 2023, and his Fino was among the restaurants recommended by the Michelin guide in 2024.

Mikołaj
Mikołaj is our head chef who has been working with Jack for years.

If we were to translate the Rocky film into Polish reality, it could easily be titled: Mikołaj, steadfast, fighting to the end and taking on any challenge to prove himself. Athletic competition is his middle name.

He also has considerable acting skills and could easily translate the roles of Mr Sylvester into everyday life. He approaches things coolly like John Rambo, an army man, he covers all sections and his execution of dishes leaves no doubt.

A ruthless chemist like ‘Judge Dredd’, he will dig into every rule and paragraph and no paragraph will escape his attention. Like any ‘night hawk’, he likes ‘life on the edge’ and sometimes the ‘demolition man’ kicks in, and then he is ‘indestructible from 1-4’. People used to talk about people like him to dance and to rosary, and as times have changed it's more like ‘Tango and Cash’ in one.

He is a very important figure in FINO!
Patrycja
She has worked with us since 2022 and has been the restaurant manager since 2023. Always smiling, friendly, modest and hard-working.

Her drive for wine knowledge does not allow her to stop, she is constantly chasing, constantly asking, constantly tasting. She is curious about the world, whenever she can, she searches for flights and plans like Taylor Swift how to get on the next plane to the other side of the globe to breathe and see things from a different perspective. She always comes back full of ideas and positive energy for action.

Patrycja is an active fan of the very difficult to pronounce sport of babing.... pading... badminton. An enthusiast of Italian cuisine and wines from all over the world.

Blażej has been with us for a long time.

Multiskiller, multitasker, multitool, he could advertise Swedish pocket knives, but first he would point out the shortcomings of this equipment. A seeker of solutions, shortcuts, workarounds, a cool analyst.

Although now on the cold section he is certainly not a cold bastard.... He's a warm-hearted colleague, as long as you don't get between dessert and snack.

He is one of the pillars of Fino!
Dawid
David joined us in the summer of 2023, proved himself and quickly acclimatised like Jude Bellingham at Real Madrid. He brilliantly bridged the gap bringing a lot of knowledge about mixology and cocktails.

David is a true ‘Madridista’, a Real fan and football enthusiast, one of our ‘Galacticos’ during the evening service. He moves with the class and agility of
Zidane, accurately shoots wine tidbits from the furthest regions like Roberto Carlos, and we always end the evening with him with Victoria like David Beckham.

In 2024, he earned the Certified Sommelier, which is a qualification for professionals in the catering industry. Passing the exam is confirmation of his extensive knowledge and sommelier skills.

Dominik
Dominic checks in on every section, but he is in charge of our weekday rolls, desserts and the cold kitchen. His head is also cold and he doesn't lose it at the biggest snuff, or at least you can't see it.

Always full of ideas and solutions. He is not interested in politics, and if asked about parties, he is always keen on squash parties.

Motoring is his passion, and this is combined with travelling, which he pursues in his spare time.
Weronika
Weronica is a colourful character, both through her tattoos and her character. She is very young and already knows what she wants. She doesn't recognise half-measures or compromises. She is skilful at adapting to situations so that, despite a lot of fuss in the evening traffic, she is able to do ‘two-star service’.

Always smiling and eager to please. She finds balance in her daily life and her professional life according to the principle ‘work hard, play hard’.

Good food, good wine and travel are her passions.... apart from work, of course.

Grzegorz has travelled the world a bit, worked in many countries, picked up a language here and there and ended up here.

A globetrotter, polyglot, theatre enthusiast and fan of good tennis.

He used to be a croupier. Today he deals the cards with us... always willing to talk and share his knowledge and anecdotes from the various corners of the globe he has visited.

Julka is the youngest in our team.

She loves fairy tales and fairy tales. She is definitely not Sleeping Beauty, and works harder than the Seven Dwarfs. She's also great with a broom like Cinderella, and when she's done, she gets on and flies to a gathering of witches and good fairies in Grodzisk Owidz to investigate the latest trends. She can divine from her cards and knows that you will be met with nothing but goodness from our menu.

In her spare time, when she's not conjuring, she listens to music. Taco Hemingway reigns supreme in her headphones and whenever he plays somewhere in the area, Julia immediately flies to the stage.

She is as curious as Peter Pan and moves around the room with her agility. When you meet her in the hall, she is sure to make you feel like you are in a fairy tale in our restaurant!

Lidka
Lidka has been with us for the shortest time, but she came in with an open mind and imperceptibly became an integral part of the FINO team very quickly.

Ambitious, polite, modest and at the same time with character. She performs her duties conscientiously and with commitment.
Fino Partners
Like the three musketeers - Cezary Dułak, Marcin Terlecki and Jacek Koprowski.

They met many years ago, trusted each other and decided to create something together. And it worked out quite well. Everyone is responsible for some part of the joint business, with duties shared in such a way as to make the whole thing work as well as possible.

Jacek, as chef, is ‘at the front’, but the whole mechanism works as a joint effort between the three of them and the rest of the crew.
